Overview of the Herb Mix

This classic culinary herb mix brings together some of the most useful and aromatic herbs for cooking, ideal for kitchen gardens, raised beds, patio containers, or even sunny windowsills. Each herb has its unique flavour and care needs, but they all share a preference for sunny locations and moderately fertile, well-drained soil.

Whether you’re growing for fresh garnish, infusions, or drying, this mix offers excellent variety, fragrance, and seasonal interest.

  • Type: Herbaceous or evergreen perennials (some grown as annuals)

  • Hardiness: Mostly hardy (zone-dependent)

  • Ideal For: Culinary use, sensory gardens, companion planting, bees and butterflies

  • Position: Full sun preferred (some tolerate partial shade)

Individual Herb Care Guidelines

Tarragon (French)

  • Growth Habit: Upright, bushy perennial

  • Height: 60–90 cm

  • Care:

    • Requires full sun and well-drained soil

    • Protect from excessive winter wet

    • Divide every 2–3 years to maintain vigour

    • Prefers slightly alkaline soil

  • Tip: Best used fresh; loses flavour when dried

Parsley – Plain Leaf (Italian)

  • Growth Habit: Biennial, grown as annual for best flavour

  • Height: 30–45 cm

  • Care:

    • Needs full sun or partial shade

    • Keep soil consistently moist but not waterlogged

    • Regular harvesting promotes new growth

  • Tip: Richer flavour than curled; best for cooked dishes

Parsley – Curled Leaf

  • Growth Habit: Compact, decorative form

  • Height: 20–30 cm

  • Care:

    • Same as flat-leaf parsley

    • More ornamental, ideal for borders or edging

  • Tip: Great for garnish, salads, and plate presentation

Rosemary

  • Growth Habit: Woody, evergreen shrub

  • Height: 90–150 cm

  • Care:

    • Requires full sun and very well-drained soil

    • Avoid overwatering or soggy soil—can lead to root rot

    • Prune lightly after flowering to maintain shape

  • Tip: Excellent for roasting, grilling, and infusions; grows well in pots

Thyme (Common)

  • Growth Habit: Low-growing, mat-forming evergreen

  • Height: 15–30 cm

  • Care:

    • Prefers full sun and dry, sandy or gritty soil

    • Water sparingly—drought-tolerant once established

    • Trim regularly to prevent woody stems

  • Tip: Flowers are edible and attract pollinators

Chives

  • Growth Habit: Clump-forming perennial with tubular leaves

  • Height: 25–35 cm

  • Care:

    • Tolerates sun or light shade

    • Keep soil moist but free-draining

    • Cut back after flowering to encourage new shoots

  • Tip: Edible purple flowers add beauty to salads and borders

General Growing and Harvesting Tips

Location & Soil

  • Place in full sun, though parsley and chives tolerate light shade

  • Use free-draining compost or soil; avoid waterlogged conditions

  • Raised beds or large pots work well for grouped herbs

Watering

  • Water consistently but moderately

  • Herbs like thyme and rosemary prefer drier conditions, while parsley and chives enjoy more moisture

  • Avoid watering foliage—target the base

Feeding

  • Most herbs don’t require heavy feeding

  • Use a diluted organic liquid fertiliser monthly in the growing season

  • Avoid overfeeding as it can reduce flavour intensity

Harvesting

  • Pick leaves regularly to promote new growth

  • Morning is best for harvesting when oils are most concentrated

  • Avoid cutting more than one-third of a plant at a time

Seasonal Care and Maintenance

  • Rosemary and thyme can remain outdoors year-round in mild areas

  • Parsley and chives may die back in winter but re-emerge in spring

  • Tarragon may need winter protection in colder zones or be lifted and potted

  • Regular pruning keeps plants compact and productive

  • Mulch with grit or gravel to improve drainage and prevent weeds
